Here at Gift Shaka Global Garri Concepts, we follow a traditional process but add some twist to give it that special kick, we will take you through some process we go through to make our garri — the images below show the process.
Farmers harvest mature cassava roots from the field, selecting healthy tubers for processing.
Roots are peeled to remove the outer skin which may hold dirt and impurities.
Peeled roots are thoroughly washed to remove soil and residues before further processing.
The clean roots are grated into a mash to break down the fibers and release moisture.
The grated mash is pressed to remove excess water and may be left to ferment slightly for flavor.
Dried granules are roasted or fried in a shallow pan to develop texture and aroma — the final garri stage.
Final sieving removes lumps; the garri is cooled, packed, and made ready for sale and distribution.
